Nick Schauman is a spirited individual with a genuine passion for what he does—and that’s something to admire.
My first encounter with Nick occurred when he was shucking oysters on the lively streets of Hampden, right outside the Corner Charcuterie Bar, a place I still fondly remember. His engaging personality made an instant connection, and as I started becoming more active on Instagram, we began to follow each other’s journeys. This was back in the days when Instagram felt more spontaneous and less commercialized. But that experience sparked our friendship.
As time passed, Nick transformed his curbside and backyard oyster-shucking into a flourishing business. He partnered with the True Chesapeake Oyster Company and eventually established three brick-and-mortar locations under his brand, The Local Oyster. Recently, he made the strategic decision to close his restaurants, focusing entirely on catering services. This pivot has proven to be a wise move. Currently, he is developing a new concept that includes steam pot kits, allowing customers to enjoy their own backyard seafood boils. Although I don’t have a yard, I’m eager for a friend to order one of these kits and host a gathering!
Nick, along with his business partner Jen Whalen from The Local Oyster, has catered events for thousands across Baltimore and Washington, D.C. They’ve become the premier choice for raw bar services, known for their engaging approach and delicious offerings beyond just oysters. Whenever I hear that The Local Oyster will be present at an event, I am confident it will be an exceptional experience.
I have immense respect for Nick’s dedication and perseverance. His journey has not been without challenges, yet he consistently embodies a hardworking attitude. This quality is something I deeply appreciate in others. Over the years, Nick has also become a close friend, for which I am truly grateful; he’s one of the good ones.
Cake or pie? And, what kind?
I’m not particularly fond of hot fruit desserts, but I do have a soft spot for pecan pie.
Your most prized possession?
After streamlining my life in recent years, I’ve realized that the most valuable thing I possess is my time.
What’s your favorite thing to order out at restaurants?
I enjoy all types of Asian cuisine, especially Vietnamese soups, sushi, and Korean BBQ. Bonchon is one of my favorites.
What’s your favorite thing to cook at home?
Roast chicken, of course!
What is your morning beverage and how do you take it?
I prefer a strong cup of coffee with just a touch of sugar and a generous amount of cream.
What’s your personal motto?
Life’s too short, so one must have fun!
What is your favorite holiday and why?
Halloween takes the crown for me. Growing up, our house was known for its spooky allure, and I still relish getting into costume and scaring both kids and their parents.
Best advice you ever received? And from whom?
Around 13 years ago, during one of my first events at the SPCA, I encountered Drew Pumphrey, also known as The Smoking Swine. He was among the few food truck pioneers in Baltimore at that time, and he advised me, “Whenever you see a camera, get in front of it!” I really valued his perspective, and I miss him greatly.
What do you consider your greatest accomplishment?
I’m proud of establishing a business that fosters community, represents Baltimore, and allows me to enjoy a fulfilling life.
The last text you sent?
“I get it. Once you read something 100 times, it just goes in one ear and out the other.”
What is your idea of perfect happiness?
I envision floating in the crystal-clear waters of the Caribbean Sea, savoring a piña colada.
What do you love most about food?
Simply put, I adore eating it.
Your favorite place in Baltimore?
Cylburn Arboretum and Druid Park have been my exploration spots for over 20 years; every visit brings new discoveries.
